At any time during the lifecycle of a Project or Notebook, you can go into the Submission Settings and update the "Solution Release Settings". Check the Release Solution Code box to allow your students to be able to review your solution after their grade is released, and their due date with late days have passed.
When releasing grades, you will be presented with a confirmation modal that will display the settings you already specified and give you an opportunity to change your settings before releasing grades.
